Lauki Chana Dal recipe with step by step photos- is a popular dish of north India and Gujarat. It is made of Lauki and chana dal. But it is neither a dal nor a lauki ki sabji. Incidentally, it is liked by the people who don’t like lauki (Bottle gourd, dudhi, ghiya) or chana dal. Indeed Lauki chana dal tastes superb.

In the preparation of Lauki chana dal you have to take care of cooking time of lauki and chana. Both of these things have very different cooking time. Lauki can be cooked very easily within 7-8 minutes. While chana dal takes its time to become soft. Therefore, I always prefer to cook chana dal in advance. If you can plan early, you must soak the chana dal for 2-3 hours. If Chana dal is puffed, you can cook lauki and chana dal together, it saves the time. However, for better flavor, you should cook chana dal in advance. And make the lauki chana dal in a pan.
I also cut medium pieces of lauki. It blends well with the chana dal. The big lauki chunks do not mix with the dal. I would recommend for medium pieces. Small pieces can disappear in the dal.
Lauki chana dal requires less quantity of bottle gourd. There may be some leftover lauki in your kitchen. You can make lauki ki kheer from it. Or, you can make lauki ki sabji, lauki ka kofta and lauki ki curry,
Ingredients For Lauki Chana Dal
|Chana Dal||250 gm|
|garlic paste||1 tsp|
|Ginger paste||1 tsp|
|cinnamon powder||1/2 tsp|
|mustard oil||1 tsp|
|garam masala||1 tsp|
|coriander powder||1/2 tsp|
|dry chili whole||3|
How To Make Lauki Chana Dal- Step By Step Recipe
To make lauki chana dal, clean the Bengal gram dal and keep it soaked for 10 minutes.
Put chana dal in the cooker. Pour two glasses of water. Now add 1 tsp turmeric powder, salt and mustard oil into the cooker . Cover the lid and put it on the flame.
Until dal gets cooked, we need to chop the lauki into medium size pieces.
The Chana dal get semi cooked after one whistle. Let the steam come out itself. Open the cooker lid. Now add one pinch asafoetida and chopped bottle gourd into it. Again cook it. After the four whistles put off the flame. Wait for the release of steam.
Now it is time to add some tadka in the dish.
Take a big pan and add ghee into it. Heat the pan. After ghee gets heated, add cumin, rai, bay leaves and whole dry chili. Saute it for 2 minutes.
Add ginger garlic paste and stir it for a couple of minutes on medium flame.
Add the chopped tomato into the mixture. Saute it for another two minutes.
Now, Add coriander powder, cinnamon powder and garam masala. Saute these spices for another one minute.
Pour all the lauki dal in the pan. Cover the lid. Again cook this tadka lauki chana dal for 2 minutes.
Garnish the lauki chana dal with green coriander leaves. Enjoy it hot.
